While using the CINQ Rolling Knife Sharpener, we recommend matching your existing edge with the CINQ Angle Finder:
- Begin with the 10° slot: Insert the edge of your knife into the slot
- Check the circle: If the blade reaches the edge of the circle without entering, you've found your angle.
- If the blade doesn't reach the circle, move up to the next angle. Keep moving to higher angles in the order of 10°, 15°, 17.5°, 20°, 25° until the tip of your blade lines up with the edge of the circle while having a snug fit in the angle slot
- If the edge is no longer snug or passes through the circle, you’ve gone too far
CINQ makes it easy to sharpen your knives with the following steps:
- Attach your knife to its corresponding angle (10°, 15°, 17.5°, 20°, 25°)
- For your dullest knives, start sharpening with the 400-grit disc: Begin sharpening with the lowest grit for only your dullest knives. Make about 30 passes on both sides depending on how dull your knives are
- Move to the 1000-grit disc and continue sharpening and begin refining the edge. Make about 30 passes on both sides.
- Proceed to the 2000-grit disc to refine your edge. Make about 30 passes on both sides.
- Use the helix honing disc to align the tip of your newly sharpened edge.
- Clean the blade: Remove metal particles generated from sharpening.
- Enjoy your freshly sharpened knife.
The Diamond Discs are embedded with high-quality diamond grit, which grinds against and removes steel from the edge of the knife creating a sharper knife by grinding down the edge to a sharp edge.
The helix honing steel aligns the edge creating a beautifully sharp edge.
CINQ’s unique pentagon shape allows you sharpen all kinds of knives. Knives like the functional chef’s knife can be sharpened with the 17.5° or the 20°. Robust knives like cleavers or sportsman/outdoor knives can be sharpened with the 25°. Specialty knives like a beautiful yanagi ba (sashimi knife) can be sharpened with the 10° angle.
Serrated knives are not suitable to be sharpened using the CINQ Rolling Knife Sharpener. Serrated knives have teeth and gullets (the valleys between the points) which require different methods for sharpening.
Absolutely, CINQ will be a great solution to sharpen your single-bevel knife. Simply secure the knife to the magnetic holder at the appropriate angle and roll to start sharpening.
Some knives have blades taller than the CINQ rolling knife sharpener, like a cleaver. Simply raise the roller up with a cutting board or butcher block and sharpen as you normally do for your other knives.
Typically, your first sharpening session to resurrect your dullest knife will be the longest. It should still only take 5-10 minutes. After you create an edge with the CINQ Rolling Knife sharpener, your following sharpening efforts will be significantly quicker and should only take 2-3 minutes.
Diamonds are much harder than the steel in your knife which means there is very little wear on the diamond disc. Under normal use, there should never be a need to replace the diamond discs.
CINQ provides an angle finder in the box to ensure you can accurately understand the angle of your knives.
10 Degrees - Use this angle carefully, avoid chopping hard items
- Ideal for tasks requiring extreme precision and minimal force, such as slicing sushi, filleting fish, or cutting vegetables into very thin slices.
- Often found in high-end Japanese knives, like sashimi or yanagi ba knives.
15 Degrees - Great angle for cutting soft foods and meats
- Suitable for most kitchen knives, including chef's knives, paring knives, and boning knives.

17.5 Degrees - Good balance between durability and sharpness
- Suitable for most Western-style kitchen knives, including chef's knives and utility knives.
- Offers a good balance between sharpness and durability for general use.
20 Degrees - Sharp and easy cutting angle
- Suitable for knives used for tougher cutting tasks, such as chopping vegetables, cutting meat, and other general kitchen work.
- Commonly found in many Western-style kitchen knives and utility knives.
25 Degrees - For knives completing rugged tasks
- Ideal for hunting knives, survival knives, and cleavers used for chopping and other tough tasks.
